Classic method sparkling wine

There is a cellar in our wine cellars dedicated entirely to Brut. It is there that our Metodo Classico is born, in the darkness and silence, ever since 1982 when we were among the first in Abruzzo to start producing sparkling wine. Our cuvée of native Trebbiano and Verdicchio grapes ferments slowly in the bottle, with its own yeasts, for forty-eight to sixty months. We then proceed to remuage using a giropallet, right up to disgorging. This is a process that requires patience and expert hands, and ultimately yields a straw-yellow wine with an extremely fine perlage. The aroma is delicate yet persistent; on the palate, it is gently fresh with a long finish that awakens the palate. Elegance expressed through bubbles: this is our Brut.

Origin
Born from a cuvee of Trebbiano grapes (Controguerra, 260 m a.s.l.) and Verdicchio grapes (Corropoli, ~220 m a.s.l.).
Yield per hectare
80 – 90 quintals per hectare.
Wine-making and ageing
First fermentation in stainless steel autoclaves at controlled temperature. Second fermentation in bottle, very slowly in cool cellars (~11 – 12°C), maturing on its own lees for 48 – 60 months. Traditional riddling (remuage) by gyropalette, completed with disgorgement and bottle ageing.
